Cardamom Seed imparts a pleasant, spicy cola-like flavor in a beer. Cardamom is complimented by coriander, sweet or bitter orange peel, or vanilla. Used in many Belgian specialty brews, but can be used in others beers like, porters, stouts, or red ales. Use up to a 1/2 tsp. coarsely ground cardamom per 5 gallon batch. Cardamom has a very strong flavor and aroma, so a little goes a long way with this spice. You could also use 1/2 tsp. in the secondary for aroma.
