Carafa II is used to intensify aroma and color of darker beers without contributing the astringent flavors dervived from roasting of the husk leading to a smooth flavor. Use as 1-5% of mash in Bocks, Doppelbocks, Altbiers, Stouts, Porters, and Schwartzbiers.
