When I brew my Hefeweizens I like to ramp up my fermentation temperature slowly to get the maximum Banana notes. If you want to go the Banana bread try grabbing 1# of Victory & Biscuit malt and adding it to your mash/steeping grains for a layer of bread and toast - a great compliment!
Acidic Citrus and Salads are a great way to contrast the sweet banana notes of a Hefeweizen. Think a Watermelon and Tomato salad, a Beet Salad with Goat Cheese, or hard toasted bread with Ricotta cheese and olives!
